This is an easy roasted asparagus recipe you can use all spring and summer. I love roasting veggies when I have a chicken in the oven. I just throw the asparagus in during the last 15 minutes the chicken is cooking and they come out perfect in time for dinner.

👩‍🍳 How to Make This Recipe

Preheat your oven to 400F. In the meantime, trim your asparagus.

To trim your asparagus, hold the bottom end of one of your asparagus firmly. With your other hand, bend the asparagus until it snaps. Try this with two more asparagus. Trim the rest of your asparagus to the longest of your 3 test asparagus.

Trimming your asparagus gets rid of the woody part of the asparagus.

Add the asparagus to a baking sheet, lightly oil, and season with salt & pepper. Sometimes I use avocado oil cooking spray instead of pouring the oil directly on the asparagus. It is easier to get a light coat of oil with the spray.

Roast for 10 minutes, toss to rotate, and cook an additional 5-10 minutes, depending on the thickness of your asparagus.

Ingredients

  • 2 lbs. asparagus
  • 2 tbsp avocado oil
  • 1/2 tsp salt
  • 1/2 tsp pepper

Instructions

  • Preheat the oven to 400.
  • Trim the stems of the asparagus about 1/2 inch.
  • Lightly drizzle with avocado oil (or spray with avocado oil spray), sprinkle with salt and pepper. Toss to evenly coat and spread them out evenly.
  • Roast 10, toss to rotate, and cook an additional 5-10 minutes until tender when poked with a fork. Cooking time depends on the thickness of the asparagus.
