Sour Cherry Shrub

INGREDIENTS YOU NEED Sour cherries  Turbinado sugar Apple cider vinegar or champagne vinegar

together pitted cherries and sugar in a mortar and pestle.

MUDDLE

 sit at room temperature for 2 hours.

LET SIT

in apple cider vinegar. Muddle them well.

ADD

to a quart-sized jar or container. Cover and refrigerate for 2 days.

TRANSFER

after the 2 days. Open your jar and muddle the mixture thoroughly.

MUDDLE AGAIN

the cherry mixture and discard the cherry skins.

STRAIN

your hands to squeeze out as much of the shrub liquid as possible 

USE

a shrub mocktail by mixing 1 tbsp of the shrub with 1 cup of sparkling water. Serve over ice.
