🧾 Ingredients in This Recipe

Ingredients for avocado toast laid out on a countertop and labeled.
  • Fresh avocado – Make sure your avocado is ripe and ready to eat. A ripe avocado will feel firm and not mushy. If you’re a huge fan of avocado, you’ll love this Pesto & Avocado Pasta Salad.
  • Your choice of bread – I almost always use sliced, sourdough bread. But you can use any sliced bread that you like.
  • Dressing or spread – I provide instructions to make this with a twist on a balsamic vinaigrette, but you can use any vinaigrette.
  • Butter – Butter adds a flavor that I love in this dish both on the toast and to fry the eggs. It gives the eggs a creamy finish. However, you can substitute with olive oil and even toast the bread in a toaster, instead.
  • Egg – I choose to make a fried egg with this recipe, but you could choose scrambled or hard-boiled and sliced if you like. If you love topping things with a fried egg, try this Savory Miso Oatmeal.

👩‍🍳How to Make This Recipe

One glass dish with dressing ingredients and another glass dish with the dressing ingredients mixed and a hand holding the dish.
  • Start by prepping your ingredients. Mix the balsamic vinaigrette, olive oil, mustard seeds (or Dijon), and salt and pepper for the dressing. Then, thinly slice the tomato, and avocado.
Toast in a non-stick pan with a hand flipping one piece of bread with a spatula..
  • Butter a non-stick pan well and place it over medium heat. Toast your bread slices for a few minutes on both sides until golden brown. Remove from the pan and set aside.

⭐️Pro Tip

Be generous with the butter to grease the pan and make flipping your eggs much easier. A great non-stick pan and a non-stick spatula also help to ensure no sticking or burning.

Three fried eggs in a non-stick pan with a spatula under the one in the middle.
  • Add a little more butter to the same pan. Fry the eggs to your preference, over easy, over medium, or over hard. I like them over-medium for this recipe to get that oozy egg!
Sliced avocado being placed on a slice of toast by a hand holding it on a knife.
  • Time to layer your ingredients. On the toast goes the avocado, then the tomato, fried egg, the balsamic-dressed salad, and a sprinkle of salt and pepper.

Enjoy your avocado toast! If you’re feeling extra special, pair it with a fun beverage like a lavender matcha latte or add some extra heartiness with a matcha oatmeal latte, a cross between a matcha latte and oatmeal. You can also enjoy it with a simple but perfect Persian tea.
