When persimmon season comes around, I get a delivery from a local farm share of a boxload of persimmons! It’s not an understatement to say this is one of the most exciting deliveries of the year for me. I purée and freeze most of the persimmon into persimmon puree for storage, and then cook and bake with it throughout the fall and winter.

🍴 Fuyu or Hachiya Persimmons?

There are two varieties of persimmon – Fuyu and Hachiya. When persimmon is incorporated into baking recipes, it’s almost always Hachiya persimmons. When these ripen they take on a mushy jelly-like consistency and a great sweetness that incorporates well into baking recipes. Hachiya is an astringent variety of persimmon.

Fuyu persimmons are non-astringent and crisp in texture like other fresh fruits. These can be eaten under-ripe and raw like apples, and are great when it comes to decorative dessert recipes and salads.
