Aquafaba or egg whites – You can use the liquid from a can of chickpeas, aquafaba, which is a vegan substitute for egg whites in recipes like this. If using egg whites, make sure to wash the egg in advance.

Borage simple syrup – This is a syrup made with 1 part water and 1 part sugar, infused with borage. You can use a regular simple syrup for this recipe or make your own borage simple syrup.

Sparkling water – You can use plain sparkling water or club soda for this.

(Optional) gin – If you do want to make this cocktail alcoholic, you can add two ounces of your favorite gin.

How to Make this Recipe

Grab your shaker or jar, and you’re ready to go! You’ll be shaking the liquid vigorously so use a container with a tight top.

Add the lemon juice, borage simple syrup, and aquafaba or egg whites to your shaker or jar. If you want to add in the optional gin, add it to these ingredients now.

Tightly seal it with a lid and shake it vigorously for about 15 seconds.

Once it’s shaken and all mixed up, add in a few ice cubes and seal again. Shake until the whole drink is completely chilled.
