Fattoush Salad with Tomato, Cucumber, Radish, Parsley, Dill, and Pita
You might want to make some extra - it's addictive. Is it bad to have too much salad?
Prep Time 10 minutes
- 2-3 cups mixed greens PER PERSON
- 3-4 Persian cucumbers diced
- 1 pint heirloom cherry tomatoes quartered
- 2-3 radishes sliced with a mandolin or very thin with a knife
- 3 sprigs dill stems removed
- 1 small bunch of parsley stems removed
- 1-2 to asted pitas
- 3 tbsp olive oil
- 1 tbsp balsamic vinegar
- salt and pepper
Whisk together the olive oil, balsamic vinegar, salt, and pepper in a large bowl. Mix with the greens.
Add the rest of the ingredients to the greens. Toss and enjoy!
