  • First, place your honey into a double boiler. You want to gently heat it until all the honey is warmed through. The honey should be heated to 95-104°F, but don’t let the temp go beyond 104°F as that will affect the texture of the honey.

  • Add the cracked cardamom pods and saffron directly to the warm honey.

  • Turn off the heat, and let the mixture sit for a minimum of 2 hours, and preferably overnight.

  • Strain out all of the cardamom pods. Transfer the honey in an airtight, sterilized container.

  • At Rosh Hashanah, serve slices of fresh apples arranged around your honey.

  • 1 pound honey
  • ½ teaspoon saffron ground using a mortar and pestle
  • 20 cardamom pods cracked open
