Add the sugar and water to a large saucepan. Turn the heat to medium, and stir until the sugar is completely dissolved in the water. Let it come to a light simmer, but not a full rolling boil.
Remove the syrup from the heat. Add in the chopped pieces of ginger and allow to steep for 5 minutes.
Add all the contents to a high-speed blender and blend for 30 seconds.
Strain the ginger through a fine-mesh strainer and pour the simple syrup into a sealable container. Store in the fridge to keep it fresh and use for up to 2 weeks.
Ginger Lemonade
Add the ginger simple syrup to your pitcher.
Cut each lemon in half and squeeze out as much juice as possible using a fork or a juicer. Pour in the freshly squeezed lemon juice.
Add the water and mix to combine. Add ice to the glasses just before serving.

You can amp up the ginger flavor without adding more sweetener by adding up to 4-oz. of the fresh ginger. I find it to be perfect at 2-oz., but if you're looking for more, feel free to go up to double. In my opinion, 4-oz. burns my throat a bit too much.Ginger Lemon Mocktail: Use sparkling or seltzer water in place of plain water for a fizzy and fun mocktail.Ginger Lemon Cocktail: You could add a shot of limoncello for a complimentary lemon taste.
