Ingredients

kiwis
very ripe, peeled and quartered

kiwi
very ripe, peeled and thinly sliced

tbsp
lemon juice
freshly squeezed

tsp
sugar
1
bottle
prosecco
or champagne
1
small bunch fresh mint
Instructions
Place 3 of the kiwi, lemon juice, and sugar in a blender or food processor and process until smooth.
Add 2 tbsp of the puree to each glass and fill with cold prosecco.
Top with a slice of kiwi and a sprig of fresh mint. Serve immediately.
Notes
The puree will keep overnight in the refrigerator. Make sure to add the lemon juice.
