If you made the homemade dough, quarter each of the 4 dough balls, then cut each quarter in half again (each ball gives you 8 pieces for a total of 32 pieces.)If using store bought, cut each pound of dough in half, then quarter each half, then cut each quarter in half again for a total of 32 pieces.
Roll each piece into a circle. Pinch the edges to form triangles. Place on a baking sheet. They don't need that much space between them. I usually fit 16 on a sheet.
Add 1-2 tsp of marinara to each triangle of dough.
Top each with toppings and a piece of the mozzarella by ripping/smushing into small-medium pieces.
Bake 8-10 minutes until the cheese is melted and the crust is golden brown.
Notes
If making your own dough using my recipe, on day 2, you can split it in half instead of quarters. Just cut it in half before following the directions in this recipe.Pizza sauce is thicker than pasta sauce, and better for pizza and pizzataschen because of the lower water content.
