This homemade fresh and rich, potent ginger simple syrup is just the sweet and zingy ingredient you need for baking, cocktails, mocktails, and more. You only need ginger root, sugar, and water to make this syrup and it will last as long as 2 weeks in your fridge.
1cupsugargranulated, brown, turbinado, or demerara
1cupwaterdrinking, filtered, or bottled
Instructions
Add the sugar and water to a large saucepan. Turn the heat to medium, and stir until the sugar is completely dissolved in the water. Let it come to a light simmer, but not a full rolling boil.
Remove the syrup from the heat. Add in the chopped pieces of ginger and allow to steep for 5 minutes.
Add all the contents to a high-speed blender and blend for 30 seconds.
Strain the ginger through a fine-mesh strainer and pour the simple syrup into a sealable container. Store in the fridge to keep it fresh and use for up to 2 weeks.

Turn it into a ginger soda at a 1:6 ratio or stronger with sparkling water or club soda.* You do not need to peel the ginger. You can use up to 3-oz. of ginger if you're looking for it to be stronger, though I've found 2-oz. to be perfect.
