This infused rosemary simple syrup is an earthy and woodsy ingredient perfect for creating fun cocktails and mocktails. The prep time is only 5 minutes, and then this herbal syrup soaks up all the peppery rosemary flavor as it steeps.
Add your sugar and water to a large saucepan. Turn the heat to medium, and stir until the sugar is completely dissolved in the water. Let it come to a light simmer, but not a rolling boil.
Once all sugar is dissolved, remove the syrup from the heat. Add in your rosemary leaves and let it steep into the syrup for 30 minutes.
Strain and transfer your syrup to a sealed container in the refrigerator until it's ready to use.

Use a nut milk bag to make sure you get all the rosemary out.
